The expression used to be "Girl Friday", as in the Cary Grant Rosalind Russell classic film "His Girl Friday". This must be the new gender-neutral term!
Actually, before that, the term came from the first English novel, "Robinson Crusoe", in which Friday was a native person that Crusoe encountered (on a Friday) and then got to do things for him in exchange for Crusoe's protection, as I recall.
We're talking about a person who can think on their feet and take care of a great number of situations that pop up, often outside their job description. A friday does things they haven't necessarily been trained to do.

this sounds like a part time job. they need a secretary who will only work on a friday period.
